Pineapple Casserole
Has anyone ever had anything like this before? My step-daughter LOVES pineapple and I was thinking her when I saw this.....She is one who likes pineapple pizza's....And to tell you the truth, it's not bad at all...She had us get one for her one time when she was here and we ordered pizza's.....
Pineapple Casserole
1 20 can pineapple chunks, drain and reserve juice
3 Tbl flour
1/4 cup melted butter
1/2 cup sugar
1 cup grated cheddar cheese (grate your own.That packaged stuff doesn't not melt in this recipe, even the finely shredded)
1/2 cup crushed crackers, Ritz or saltine
Preheat oven to 350
Combine flour, sugar and 3 Tbl pineapple juice
Add cheese and pineapple, STIR
Spoon into greased casserole dish
Mix crackers with melted butter and scatter over top of casserole
Bake 25 minutes until bubbly

Now I'm really going to have to make a point of picking up the ingredients I don't already have and trying this recipe. I think all I need are Ritz crackers and cheddar cheese. I'll bet DH will like it too.

Glad your step mom liked it Chris.....I too, made it for Thanksgiving this year, and since we didn't go to my parents I couldn't see how everyone liked it......My brother did call to tell us he liked it, and my mom said she liked it, too.....I kept enough of it out so I was sure to get some... ...It's good warmed a tad in the microwave, too....
Oh, I did double it and used one can of crushed and one can of the tidbits......

I made it and brought it for our Christmas Eve dinner. I think it went over very well. DS#1 thinks it would be good served cold.

I have to tell you that my Pineapple Casserole turned out even better this year. The topping was perfectly crisp even after warming it up in the microwave. Last year, I followed the directions on another recipe which had the same ingredients but was doubled. The only difference was that you added the reserved pineapple juice to the cracker crumbs and butter instead of the flour and sugar. Having never made it before, I didn't think it would make much difference. Ha! This year I followed LucyGoose's recipe and did not double. I did have a little over 1/2 cup of cracker crumbs and used them all. A lovely new stove couldn't have hurt anything either.

I still love this stuff and it continues to delight the taste buds!!! I made it again this year for Thanksgiving. I crushed a bit more than the required amount of cracker crumbs but I put them in anyway. My mom had us make up a plate for the lady next door. When I went to my mom's yesterday, she told me that her neighbor would like the recipe.

Dee_dla, I made it this Thanksgiving also....it's one my mom wanted me to make as she loves it............I like it cold & warm......
I have always doubled it using one can of the Tidbits and one of crushed....I put the crushed in one of those hand held metel strainers, and push on it with a spoon to get more of the juice out.......but you can use any one of the pineapples....
