Jicama Slaw

I just discovered jicama this year and love the fresh crunch of this root vegetable. It's kind of ugly and had a thick skin, but the flesh has a nice crispy crunch. (My local Walmart carries it.)

Here is how I prepare it. Very easy and a fresh citrus flavor. I took it to our 4th of July cook-out.

1 jicama, peeled and cut into 'matchsticks'
1/2 c. carrots, also cut into 'matchstics'
1 or 2 limes
1/4 to 1/2 c. orange juice
1 T. olive oil

All amounts are approximate, I just throw it together.

In a bowl combine jicama, carrots, orange juice, and olive oil. Zest the limes into the bowl the squeeze all the juice from the lime(s) into the bowl. Put a lid on and shake to mix it all up. Keep refrigerated and enjoy.
