Quinoa

Since I am now on a wheat/gluten free diet, I bought some of this Quinoa.....has anyone ate this stuff before? My mom bought some too....she just did the recipe on the back of the bag, but I was wondering if anyone here has a favorite recipe for this stuff......I did do a google and got some off the net, but if anyone has ate it and liked it, I would love if you'd share.....

I've had quinoa. I cooked it and served it "plain" as a side-dish, just as you might serve a side of rice. It reminds me more of couscous or brown rice than it does white rice, and has an interesting appearance.

It's very good for you -- high in protein. Be sure to wash it thoroughly before cooking to remove the bitter taste.

I should buy some to have once in awhile. I haven't tried it, but to "spruce it up", I'd probably go for a pilaf style dish. I'll bet it would be very good if done pilaf-style with something like vidalia or green onions, dried apricots and/or raisins, and sliced almonds. :)

Thanks!! I still haven't cooked it...I might tonight....Do I need a big strainer? Because all I have is a small mesh one.....might take awhile......I know my mom mentioned it looked like.......sperm......... :lol: ..and she said that I was the only one she could say that to..... :lol:

no, it doesn't look bad (not sure how else to answer that. lol!)

Individual grains are small and round, and have a bit of brown on them... sort of "curled". weird to describe and it's been awhile since I've made it!

I recall "washing it" the same way I do barley or dried beans: I put them in a pot, cover well with cold water, stir well, then gently pour the water off (as much as possible without dumping the grain/beans). repeat at least once more.

Then to cook it, I just added some water and simmered like you would rice. The standard ratio is one cup of grain and two cups of water. I buy quinoa and things like that in bulk (from bins) at a health food store -- so that doesn't come with instructions. :) Simmer for around 14-18 minutes -- until the germ separates from the seed (that's the brown part you'll see).

For pilaf-style dishes, I'd pre-cook the quinoa. In a separate skillet I'd sautee some onions in olive oil a bit, add dried fruit or veggies or nuts (depending on the look, taste, and texture I want) til heated through, then stir in the quinoa.

I hope that you like it! I need to get over to that health food store to stock up on some things like that.

Can you eat barley? I can give you an awesome version of tabbuli that I make with barley. :cool:

Wow, thanks!! Still haven't made it....seems I am running late and just have not done it yet......Costco had big bags, so I will have it for a while.... :lol: I am not sure of the barley.....I think I can......I do know that when I put it in soups I would get terrible gas....so now that you mention it, maybe I can't......because I quit eating it because of that.... :hmm:

Try Beano for the barley issue. It is good for more than just beans and cole vegetables.
If it doesn't work, blame the noise on Jay.

yikes! I just researched celiac disease. You definitely cannot eat barley. The list of what you can eat is here:

Yep....that's it.....it sucks.....it's not bad here, as we didn't eat out hardly ever, anyway....but Lord help me at the holiday's..... :( ......I will be whiny for sure..... :lol:

It does suck, but I think you'll be ok around the holidays... especially knowing the consequences of eating the wrong things. There are enough sweets and other things you can have to "indulge", right? Mix up some nuts, dried fruits, and chocolate, and wash it down with alcohol, for example. lol!

alcohol is a no no too....or I should say lots of it are...beer some wines.....it's back to reading labels.......I do not drink any more so THAT is not in the picture now...... :lol:
