does anyone have a tried and true crockpot potato recipe?
Would like a really good crockpot potatoes recipe to serve with baked ham? Isn't there one out there with maybe hash browns, sour cream, etc? Was thinking would be nice to put this on earlier in the day so I can concentrate on the rest of the meal for Christmas eve dinner. thanks! Jackie
This probably isn't exactly what you are looking for, but it's what I do for mashed potatoes on Thanksgiving and Christmas. I can do all the work ahead of time and still serve "real" mashed potatoes.
Two or three days ahead (before the real time crunch hits) I peel, boil and mash 10 lbs of potatoes, adding a stick of butter, cup or so of sour cream, 8 oz cream cheese, some milk, salt, pepper, chives. Just make whatever mashed potatoes you like. Then I put them in containers (for me it takes 3 large cool whip containers) and refrigerate them until the day I want to serve them.
The day of the event, butter your 6 qt crockpot and fill it with the refrigerated mashed potatoes. Dot butter chunks on top and turn on the crock pot. In 3-5 hours they will be warm enough to serve and will taste delish. But sure to to stir once or twice while heating so the center gets hot.
I find that a 10 lb bag of russet potatoes is perfect for a 6 qt crock pot.
One year I tried a crock pot recipe that used frozen hash browns and cheese and such, but it just didn't seem to get done quite right. Now I just stick with the mashed potatoes because everyone eats them.
Perhaps others will have better ideas.

I tried your mashed potatoes and did them about 10 days ahead of Christmas, I froze them and then my friend said oh no they will not freeze, so I worried, until Christmas Morning when I got up early and put them in the crock pot like you said for 3-5 hours and they were just like fresh, everyone loved them. So you can freeze them. Make them early. Thanks so much for the great recipe.
