Dill Pickle Soup

Has anyone ever had this? My bro-in-law gave me a copy of the recipe, but I didn't want to make it until I got some opinions from people on whether they like it or not. He said it was good.

Here's the recipe:

Dill Pickle Soup

6 cups chicken stock
4 large dill pickles, shredded
1/2 cup pickle juice from the pickle jar
2 1/2 cups thinly sliced potatoes
2 tablespoons instant dissolve flour
1 cup milk
2 tablespoons soft butter
Garnish with fresh dill or sour cream

In a large saucepan or soup pot with lid, combine stock, pickles,pickle juice
and potatoes. Bring to a boil and then reduce heat. Cover and cook over low
heat until potatoes are soft. (about 10 mins.)

Combine flour, milk, and butter to broth; bring to a boil and then remove from
heat. Return pot to the stove and heat through without boiling. Season with
salt and pepper to taste. Garnish

Let me know what you think. I've never heard of putting pickles in soup, but sometimes
odd stuff like that turns out to be very tasty. :wink:

Ugh!!!

Instead of vinegar, I add diced dill pickle and some of the juice to potato salad.

Hey, I get this all the time at my favorite Polish restaurant in Hamtramck MI, The Polish Village Cafe. It may be an acquired taste but I think it's really good, not too picklely tasting. Is picklely a word? Try it, you may be surprised... :D Thanks for posting the recipe Joan, I'm going to try and make it.

Wow, I'll try anything and have never had this.....what size jar is the pickle jar, you think? Thanks....I will try it too, someday!! Thanks!!

I'm assuming that you get a large jar of pickles in order to get 1/2 cup of the juice. Are you able to eat the ingredients in this, LG? I'm not sure what is on a Gluten-free diet.

I would just have to use my rice flour or my all purpose GF Flour blend.....but should not be a problem whatsoever..... A gluten-free diet is a diet that excludes the protein gluten. Gluten is found in grains such as wheat, barley and rye. I will try this someday! :lol:
