Potato Candy

One SMALL potato (palm of the hand small) , peeled and boiled to fork soft. Mash it up smooth.

Add powdered (confectioner's) sugar. Have at least 2 lbs on hand, you will use at least one pound.

when adding sugar add a little at a time mixing it in thouroughly. Add sugar untill you get a dough that you can roll out with a rolling pin. (You will regret having too large a potato at this point!)

When you can roll the dough out on a cool surface roll it out as thin as you can. I cut it into manageable strips. Spread smooth peanut butter onto it (thicker is better than thiner)

Now you will roll the dough onto itself with the peanut butter inside so it makes a log.

Cover with wax paper and refrigerate. When it's firm enough to hold it's shape you slice it into thin disks and stack it between wax paper and refrigerate to keep. Eat up! it's very sweet!
