Banana/Pineapple Bread

Banana/Pineapple Bread

3 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 cups sugar
1-2 teaspoon cinnamon
1 cup chopped pecans or walnuts
3 eggs beaten
1 cup vegetable/canola oil
2 cups mashed ripe bananas---4-5
1 can (20 oz) tidbits pineapple (I used in own juices) drained
2 teaspoon vanilla

1.) Combine first 5 ingredients, stir in nuts.
2.) Combine remaining ingredients: add to flour mixture, stirring just till dry ingredients are moistened.
3.) Spoon batter into greased and floured pans
4.) Baked at 350 for 1 hour 10 min. or until wooden pick inserted in center comes out clean.
5.) cool in pans before removing.

Okay, I didn't flour the pans, I just used Pam....I also find that I don't know how many pans it takes, because it depended on how many banana's I used.....Just don't fill the pans but just about 3/4 full.....I used the little tin pans so I can freeze them....Seems each batch is different....

I love banana bread and I love pineapple , so this sounds like a real winner to me! I'll be sure to make it sometime.
