Marzipan cookies

Post by thy »

First the Sweedish recipe I used, it is very easy

Cool down to a point where you can grain it 400 g of real marzipan ( almonds and sugar only)
Whip the white stuff from one egg stiff
Melt 3 tablespoons of butter
Mix the 3 things

Heat the oven to 175 C ( medium temp)
Add the marzipan in small tops to a baking tray ? hmm, the thing you put in the oven
Press them slightly with a fork or finger.. sprinkle with pine nuts or other nuts
Bake for 12 minutes
Sprinkle with powdered sugar

They do get rather soft so here are my old reciepe, thought i had lost it in the move.
It is more difficult, but the cookies are a bit more crunchy

Melt the marzipan a bit.. so you can stir it.. I use a very good caserolle, but think it might be possible in the microwave- low effect and over several times- it just have to be soft
Add the white stuff  from 3 eggs and 130 g of sugar. stir
Add pieces of walnuts or what ever you want- stir

Put on the oven tray- use baking paper, in small tops and bake for 5 minutes with high heat 250 C
or as I do for New Years evening - bake it as a hole cake in an well oiled baking form or deep plate (It is very sticky so use paper)
15 minutes in an 190 C hot oven.
Cool and cover with chocolate - decorate as wanted.
It is very sticky so use paper

If you can find different sort of real marzipan, go for the one less fine chopped- or if you have lots of almonds, do it your self: 2/3 of almonds with out the peel and 1/3 of white sugar

Please let me know if this is not posible to understand  :hmm:
