Grilled zucchini

Post by Wheasie »

Slice a LARGE zucchini lengthwise - about 1/2" thick. Marinade in low fat Italian (or similar) dressing with some minced garlic and tbsp or so of balsamic vinegar for a few hours.

Grill until tender, top lightly with grated parmesean.

ONE WW point for the whole zucchini (which is impossible to eat by yourself).

There is no such thing as one zucchini in the garden. I did buy three cylanders for $.99 a pound and added them to my Chix stir fry. Yummerz. Maybe I'll plant some this summer. We grow pumpkins.....zucks are a squash. I LOVE squash. Later, Love, Lisa

Truth, Lisa!

I planted one plant last year and still got so many I had them rotting on the vine.

I can't even imagine people who plant a row of them!
